As populações em risco de deficiência de vitamina C são aquelas para as quais o suprimento de frutas e vegetais é mínimo. As epidemias de escorbuto estão associadas à fome e à guerra, quando o suprimento de alimentos é pequeno e irregular. Crianças alimentadas predominantemente com leite tratado termicamente (ultra/alta temperatura ou pasteurizado) ou fórmulas não fortificadas e que não recebem frutas e sucos de frutas apresentam risco elevado de doenças sintomáticas.

This condition groups several clinical consequences secondary to vitamin C deficiency with scurvy being the most severe presentation.
